Preparation depends on the type of mushrooms . Let us first understand what mushrooms really are.
Mushrooms are fungi. They belong in a kingdom of their own, separate from plants and animals. Fungi differ from plants and animals in the way they obtain their nutrients.
Generally, plants make their food using the sun’s energy (photosynthesis), while animals eat, then internally digest, their food.
Mushrooms aren’t really plants, they are types of fungi that have a “plantlike” form – with a stem and cap (they have cell walls as well).
This is really just the “flower or fruit” of the mushroom – the reproductive part which disperses the spores. Mushroom soup is prepared to enhance appetite usually as a starter before the main course meal and many nutritional health benefits.
Why Think of Mushrooms?
Most people love mushrooms for their aroma. However, they also have high nutrition and medicinal value which include;-
Dr. David Ssali, a naturopathic with Dama Medical Herbs says, mushrooms are a good source of insoluble fibre, among other nutrients.
He says that the low fat insoluble fibre found in fresh mushrooms has anti-cancer properties, promotes bowel health, lowers cholesterol levels and reduces the risk of heart disease, diabetes and colon cancer.
Ingredients Used in the preparation include;
– 7 tablespoons of vegetable oil or
– olive oil
– 2 garlic cloves crushed
– 500g of fresh mushrooms
– 2 tomatoes skinned and chopped
– 2 small onions chopped
– 750ml of vegetable broth
– Salt
Procedure
1. Heat the oil in a sauce pan
2. Add onions, garlic until golden brown
3. Add tomatoes and stir until tender. Add mushrooms and season
4. Add the vegetable broth, salt to taste.
5. Cover and bring to boil, lower the heat, simmer for 15 minutes after serve soup hot.
